Theyve had a camcorder for a long time; they must know what they are doing right? And what the heck its free! But then you watch the video and the memories you had just arent coming across the way you remember them; or at least you didnt get see sick during the real thing. Nearly every time I go, Im surprised at the peculiar lineup of seminars being offered. Food safety, new credit card options, employee benefits, uniform rentalsnearly every subject of interest to restaurant owners and operators is covered. Every one, that is, except marketing. Why is marketing acumen taken for granted in the restaurant business? Perhaps its the divide that exists between major operators and small independents. Chains and high-volume independents have the staff and the resources to develop sophisticated marketing programs that attract and retain customers as well as promote new products. Their need to acquire new skills is relatively small. Small independents, on the other handthe largest segment of the restaurant industry, by the wayare in critical need of help. As I meet small operators one-on-one at these shows, the question I hear most often is, How can I get more customers? Its a question that deserves to be answered. Marketing, in its simplest expression, is the process of creating and maintaining a relationship between a merchant and his or her customer. The science of marketing as practiced by the big guys, however, involves disciplines that are way beyond most local eateries. In order for smaller restaurants to succeed, they need tools that are appropriate for their size and capability. Sadly, they get precious little support from the industry in acquiring or leveraging those tools. The fact is, a wealth of local store marketing tactics exists for the local operator that is both practical and highly effective. Menu spin-offs, tableside selling, strategic couponing, email, and targeted direct mail are just a few examples of activities that can pay off in a big way. Powerful solutions are available for regaining lost customers, generating referrals and word-of mouth, increasing bar sales, attracting new residents, and converting phone inquiries. Special event sponsorships, public relations, sales promotion, one-on-one marketingthe instruments available are endless. Are they properly communicated? Hardly. Many local restaurants labor under the assumption that theyre at a disadvantage compared to deep-pocket franchise or chain operations. Actually nothing could be further from the truth. Small restaurants typically have a better knowledge of the community, can execute programs faster, and are more willing to take risks. All they need is someone to show them the ropes. Nor do most marketing ideas take months of practice or advanced business knowledge. Many of the best local store marketing ideas can be implemented quickly and with minimal effort, yet generate benefits that chains simply cant duplicate. So how can marketing knowledge be better imparted to small independents? National trade shows are probably the first and most appropriate place. By the looks of most seminar rosters, marketing is an afterthought. It needs to be front and center, right along with other critical business topics. National restaurant conventions could take a cue from the pizza industry. At this winters International Pizza Expo in Las Vegas, the lineup of marketing seminars included presentations on 10 Ways to Increase Your Business in 20 Days, Pricing Secrets of Restaurant Owners Who Get Rich, and The Fun-Damentals of Four Walls Marketing, among others. Attendees reported that rooms were packed, with people literally sitting in the aisles to hear the various tips and ideas. Other informational venues are also underutilized, such as state association gatherings. Theres no shortage of qualified and dynamic marketing experts who, if sponsored by trade groups or vendors, would be willing to give talks. More trade magazine articles on the subject would help as well. The Internet is one more place where trade groups and associations can offer marketing advice. At the National Restaurant Association website, www.restaurant.org, articles, books, and networking opportunities are currently available. Not many, howeverand unfortunately theyre not emphasized. Perhaps if NRA members, particularly small independents, strongly voiced their desire for more street-smart marketing information and training, a broader range of materials would surface. For independents seeking immediate help, a number of marketing specialists have created excellent books and websites that shouldnt be missed. What behaviour will improve your chances for success? Behaviour which can be described as good work ethics. The answer on how to cultivate good work ethics is simple. Make yourself one of the linking pins in your organisation.A linking pin is someone to whom everybody turns to, to get information and advice from. It is also someone who can link persons, sections and departments for better co-operation. But most important of all, it is someone who can exert influence upwards, downwards and sideways in the organisation structure. In other words you must be able to influence people around you to carry out the wishes, policies and strategies of top management, by earning respect through your display of expertise and thoroughness. You must also be able to represent the valid wishes and needs of lower levels to top management. You can become a linking pin by striving to attain the following traits: 1. Cloak yourself with expert knowledge in your technical field of operation. If you are an electrician, do not only be satisfied with your qualification. Try to gain more in depth expertise in this technical field of yours, to distinguish yourself from other electricians. If you are an accountant, avail yourself of in depth knowledge about bookkeeping practices by studying or reading up on subjects pertinent for your field of technical expertise. You can bluff your way during interviews, but once you have been appointed, people expect from you to perform. This is where the cookie crumbles or you succeed. The point is you must not only perform at an average level, but you must display exceptional or above average expertise, so that others can start to rely on your opinions and advice. 2. Produce accurate work. Cultivate a habit to carry out your work correctly with a minimum of mistakes. Sloppiness or tardiness must definitely not be present in your attitude, personal appearance or any of your work outputs, be it notes, memos, letters, spreadsheets, conversations or anything related to your work. Imagine what will happen if debits and credits are being processed the wrong way around in a financial department. It will have disastrous consequences. Strive for professionalism in what you do. 3. Be quicker than most. This is one of the best ways to demonstrate your superiority and efficiency. By executing duties and tasks speedily, you are being more productive and can entice more important tasks your way and thereby not only increase your merit ratings, but also your ultimate job rating. If you can perform your duties speedily, do not wait and stay idle, but present yourself to your superior for more work. Find a balance to be both quick and accurate. 4. Display awareness of productivity. This must start with your own self-evaluation. Ask yourself constantly if you are giving more back to the organisation in value, than what you are being paid every month. Although not easy to calculate, just thinking about it may have enough of an impact. Just imagine for a moment if your organisation were to be solely dependant for profit on the output of human beings only. In other words nothing to sell or produce but labour output. If you can do more, it reflects directly on profit. Luckily a lot of organisations have machines that make up in productivity for what is lost by unproductive employees. But being more productive in what you do as a human being, can contribute significantly to the profits of any organisation. As salaries are one of the highest cost elements in any organisation, this is one of the first cost elements that come under scrutiny during times of cost reduction efforts. You have to show your worth in order not to be included in downscaling of the labour force. But more positively, you have to show your worth to be counted in for consideration for promotion. 5. Get rid of time wasters. Arriving late for work, stretching of tea and lunch breaks and elongated private conversations on the phone, are not only wasting your valuable time, but are a reflection of your poor awareness of productivity. Private conversations on the telephone are one of the most abused methods of stealth stealing from your employer. If you cannot be trusted on the use of the telephone, what else can you be trusted with? Are you a role model for getting rid of these time wasters or for abusing it? Are you earning respect for your ethical conduct in eradicating time wasters or are you just one of the crowd? If you discipline yourself and others around you on the economical use of time, you are on your way to earn a respected leadership role. Others must detect a sense of urgency in your execution of duties to begin to respect and follow your example. Do you want to be a follower or a leader? Do you want to stay obscured in the crowd for the rest of your life or do you want to be recognised? There is such a thing as telephone ethics, you know. If you are prepared to pay for your use of the employer telephone, you are not abusing it. Do you really know what you are costing your employer for using the phone? You are not supposed to use it for private purposes in the first place. It is a privileged instrument entrusted to you to help you in your work and not to cause financial loss to you employer. 6. Be open-minded and ready for organisational changes. Whenever changes are announced, be positive and display a leadership role in executing the new policies and strategies. If you participated in the planning of the changes, then you were forewarned. But even if you experience unexpected changes, be first to look out for positive reasons for such changes and to influence others around you to accept it with positive attitudes. Defending superiors and higher management will increase your leadership status and trustworthiness. In a political sense it will display your role as siding with management against the disgruntled crowd. 7. Arrange and organise your paperwork. A good filing system allows you to retrieve required documents and information fast for own use or for use by other parties. It is a reflection of your efficiency and your ability for sound logic thinking. If you surround yourself with paperwork to impress on others how busy you are, you are making the mistake of your life. It can be interpreted in many different ways, like you cannot cope with the workload, you cannot delegate, you spend too much on time wasters, you are too slow and worst of all you cannot manage yourself or others. If you cannot get rid of papers, you will not find the time to attend to the needs and development of your subordinates. You will also not find the time to liase with colleagues or to discipline your section or department. You will be a walk over and ripe for being misused by subordinates not respecting you. Rather be a reliable source of information with the time for training your subordinates and others. Clean up your desk to make time for others. 8. Read up on the principles of supervision and management. Familiarise yourself with the knowledge on how to be a good supervisor or manager. If you can display management capabilities, you will sooner be identified for promotion. It is better to be promoted for your managerial capabilities than for your technical proficiency. It will allow you to perform your managerial duties better. Apart from being technically proficient, prepare yourself in advance for possible promotion. Make yourself ready and available for your employer and the future needs of your organisation. 9. Confidential information. Your treatment of confidential information is going to be a good gauge of your character. You only have to make one mistake in this area, not to be trusted ever again. If you have a problem in this area, rectify it quickly. Your superiors and employer have to trust and rely on your discretion with confidential information. Some information must be kept confidential or secret until it is time for disclosure.You must proof your ability for discretion with this type of information, so that they know they can trust and rely on you. Let them know and understand that you are part and parcel of management. 10. Show initiative. Make suggestions to improve methods of work and systems. See problems as opportunities for improvement. Do not just report problems, but analyse it wisely and make recommendations for improvement. Recognise opportunities for improvement and development and utilise it. 11. Be honest, open and direct. Harboring a secretive attitude of slyness with hidden agendas, will not remain a secret for long. Other persons will eventually detect it and despise you for it. You can just as well fire yourself, because that is where you will end up. Nobody will trust you after you have been exposed. Be open and direct in your communications and handling of conflict situations. Do not be afraid to air your opinions, as long as it is genuine and true. Truthful mistakes can always be remedied later on. Summary: Life is ever so short that nobody can really afford to remain average in the obscured crowd of nobodies. Make yourself stand out as someone with strong principles and work ethics, so that others can rely on your strengths. Qualifications alone, without work ethics, are totally worthless. The amount of plastic used for the simple purpose of packageing chese doodles is ridiculous. This prompted a useful discussion; I am not convinced that they are completely sold, but at least the lure of pretty packaging will make them think twice. 2. Turn off your lights, and encourage the same practice at work. By the way, does anyone know why so many highrise buildings burn brightly at 3 am? 3. Consider keeping the thermostats high (or low, depending on the seasons) when the house is not in use, or in rooms that arent routinely used. 4. Reconsider what the lawn service is dumping on your yard and ask questions: what does it do, is there a good environmentally sound alternative? And, reconsider your relationship with your grass: does it really have to look like a green carpet? Arent some of those so-called weeds green and pretty? 5. We are now washing more and more with cold water. The clothes still get clean, and our hot water is reserved for showers. In addition, biodegradable detergents are just as effective as our old favorites. A disclaimer: our household is hardly the posterchild for environmental stewardship. We drive too much, our house requires more resources than it should and some of our practices are hardly environmentally sound. However, the focus should be on what we are doing to make a difference and to make a point of increasing efforts all the time. The Miracle Diet Drug that Fen Phen Attorneys Now Know is No Miracle

The reason for such a large consumption was the immediate weight loss associated with the drug. However, after ties between Fen Phen and the fatal Primary Pulmonary Hypertension were established, American Home Products removed the drug from the market in mid September of 97. While Fen Phen supporters did not want to believe the horrible side effects that would befall some, they soon came to the realization that the drug was quite harmful. Soon after Fen Phen was pulled from American shelves, evidence implicating AHP of withholding serious knowledge of the harmful side effects the drug would cause came to light. Since millions of people had taken the diet drug Fen Phen, a large percentage of these people were experiencing drastic side effects, and in some cases even death. Many people say they would pay any price to lose weight. However, death was not the price they wanted to pay. A large number of the lawsuits filed in state court were filed because of the different effects Fen Phen caused on peoples health. The people filing suit were seeking some type of compensation for the rising medical bills they were incurring. In late 1997, every single federal Fen Phen case was transferred to the United States District Court. This event started a series of nationwide Fen Phen settlements. In mid-November of 99, preliminary approval was given to the settlement class. In order to find that the agreement reached in the settlement was fair, the district court held a hearing. In August of 2000, the settlement agreement was awarded approval. Thus creating the American Home Products Settlement Trust. After attempts to overturn the courts ruling, the AHP gave in to the settlement. If you are a patient who has suffered from PPH (Primary Pulmonary Hypertension) caused by the diet drug Fen Phen, then you should know that you are not part of the settlement agreement with AHP. Why Do Folks Watch Birds?

By John T Jones, Ph.D. Ive been a bird watcher for most of my days. I became a bird nerd while a teenager and would skip school during the major migrations to watch the birds. The truant officers frowned on this and would come out looking for me. They seldom got as far out in the boonies as I did. My home state of Utah was 85,000 square miles of good birding territory with almost 500 species of birds due to the variation in climate, altitude, and terrain. There was a good population of waterfowl and shorebirds. It was not difficult to see 100 species in a day. Birding on the gun clubs and reserves near Great Salt Lake was a major pastime. At times we would hitchhike the 80 miles north of Salt Lake City to the Bear River Bird Refuge 14 miles west of Brigham City. Im not sure what its status is now but when I was young it was the largest bird refuge in the world. In recent years, the Great Salt Lake has risen and it covered the bird reserves for some time. The reserves are coming back but birding is not like it was in our day. Still, I like to drive out to Bear River and think about what it was like and hopefully will be again. The thing about birding is that you can do it in the city or country, on land or sea, at work (sometimes) or on vacation, or even when sick in bed. If you cant get to the birds you can get them to come to you by designing your yard as a bird habitat. Bird study is like painting a landscape. There is no clock and there is no hurry. Its a time of complete relaxation and exclusion of the cares of the world. If you are not an artist, its doing something that requires your total attention and excludes all other activities. Most birders keep a list of their sightings. Some record in detail what they see, others just check the bird off in the back of their bird guides. Many photograph the birds they see, a hobby in a hobby. Some years back I vidio taped the history of the Canada Goose for a total year. From the time they are born until the time of their first migration is just over 80 days. I enjoyed watching the geese that wintered in South New Jersey, the mating rituals in the spring, the raising of the young, and the migration flights. I indend to put these tapes on DVD for future enjoyment. During the period that I studied the geese, I photographed thousands of snow geese at the George Forsythe Bird Refuge near Atlantic City. During the winter there are tens of thousands of these magnificent birds in New Jersey, Delaware, and Maryland. The millions of people who live in this area, if they will take the time to do it, can easily view them. To view birds start with a pair of good binoculars. I like 8 X 35, but you can get a more powerful pair if you like. If you do, you may want to have a pair that has adjustable magnification. A spotting scope with an adaptor for mounting it on your car window is good when watching birds in a refuge. You can mount a camera to it. Get a tripod. I have a pair of binoculars with a camera built in. I havent used it yet, but I’m sure I will enjoy it. You will need a field guide for your area. Carefully read the descriptions. Remember that birds are creatures of habitat and you will find them in the particular habitats described in the guides. Note their migrations. Maps in the guide will tell you which times of the year you will be able to see specific birds. I suggest that you buy at least two guides that cover your area. Visit a local bird club (like Audubon) to meet people who know birds and who will help you identify birds on field trips. Some of these folks may be a bit quirkier than other people you have met, but they are most always friendly, helpful, and intelligent. There will probably be a professor or two at each meeting. You will be in good company. I was in St. Louis just before Christmas and I went birding with my son. It felt warm when I left the house, so I didnt dress for the weather that suddenly chilled. When you are old, you are cold. While I was sitting in the car waiting for my son, he saw a Piliated Woodpecker. The Piliated is a very large bird, the size of a crow, and always exciting to see. Fortunately, my son photographed the bird and I was able to see it, a male. So dont do as I did. Dress warmly in the winter. Recently, the Ivory Billed Woodpecker, which is even larger than the Piliated Woodpecker, was rediscovered. Over the years sightings have straggled in, but many thought the bird was extinct in the United States. This great creature is every birders dream to see.
